We strive at SoChatti to create a sustainable supply chain for the benefit of future generations.

CHOCOLATE MULCH

At SoChatti, every part of our raw ingredients supply chain may be useful. In 2020, we launched a cacao mulch program, where winnowed chaff (shells and small nibs) from chocolate manufacturing may be used to enrich your gardens and bring the fresh aroma of chocolate to your outdoors. SoChatti Chaff is flash roasted and carefully sorted during the winnowing process, and returned to the original burlap bags for re-use. We currently have mulch or chocolate chaff available onsite for brewers, which may be purchased for $0.50/lb.

Step 5: Transport to Covanta

Our packaging process is what keeps our flavors rich and pure. First, the chocolate is removed from the grinder and strained to filter out any unground ingredients. The outgassing process is next, where SoChatti is placed in a vacuum cleaner to extract microscopic air bubbles that may degrade the flavor over time. SoChatti is then immediately bagged to preserve the chocolate's flavor until you are ready to enjoy.

Step 6 : Monitor Recovery

Covanta will provide SoChatti with documentation certifying each batch processing along with a semi-annual report estimating carbon offset and material recovery.
